  • Regulations Governing General Hygiene Requirements for Food Premises, has now been Gazetted.

  • The R638 replaces the R962.

  • R638 states more specifically than R962, that the person in charge such as a supervisor, as well as all food handlers, must be trained in principles and practices of food safety and hygiene. 

  • This should be accredited training. The person in charge must evaluate the effectiveness of the training through assessments. Finally, records of training must be kept and training programmes must be updated.

OVERVIEW

In essence, without the skills and knowledge of basic food handling, employees would not be allowed to enter the food sensitive manufacturing environment.

Our facilitators speak Afrikaans, English, Sepedi, Zulu and Xitsonga Sotho.

Whilst providing a practical approach using workplace examples and case studies to ensure a thorough understanding of hygiene and food safety practices, the programme focuses on why the daily application of these practices is important and how these should be applied. 

This qualification will contribute to increasing levels of personal and product safety and will develop a common integrated and co-ordinated approach to the handling of food and related products as well as critical life skills beyond the boundaries of work.

FUNDAMENTALS

  • Numeracy & Communication at NQF Level 1

SPA 1 - Basic Food Manufacturing Hygiene for R638 

  • This is the heart of the qualification

  • Covers Good Manufacturing Practices as part of a Food Safety System, Personal Hygiene, Health and Presentation.

SPA 2 - Machine Operations and Cleaning

  • Covers machine inputs and outputs, taking product samples to test the outputs, automated cleaning and packing of completed product in a safe and hygienic manner

SPA 3 - Life Skills

  • Covers knowledge and skills of healthy living, HIV/AIDS, time management and diversity

SPA 4 - Computer and Finance

  • Covering basic PC and keyboard skills including internet access.

  • This Learnership will equip operational staff, both employed or unemployed, to obtain a qualification in the primary packaging process within a specific food or beverage context using Standard Operating Procedures for specific machines/processes. 

  • Learners will be able to understand and demonstrate the skill required to produce quality products, apply first line maintenance and principles of line efficiencies, optimisation and operation. Above all, they will possess the skills and knowledge needed to be effective and versatile team members within the client’s operation.

  • The benefits to the business of running this Learnership include contribution to the NSDS, grants and tax rebates, but above all access to competent learners who are able to contribute to achieving business targets in a constructive and meaningful way.

A minimum of 6 learners per group is required to run this programme on a cost effective basis.

GROUP SIZE

After completion of the programme, learners will possess the required competence to be eligible for employment in permanent operator positions or similar roles as per company needs.

TYPICAL SKILLS PROCESS AREAS

SPA 1 - FILLING; CLOSING & INSPECTION OPERATIONS

  • This is the heart of the qualification where learners identify the purpose and role of Filling, Closing and Inspection in the packaging operation. Typically the vital on line function of autonomous maintenance is integrated into this module.

  • Operate Filling Closing and Inspection  equipment.

  • Conduct and appreciate first line maintenance.

SPA 2 – QUALITY AND FOOD SAFETY

  • Identify the effect of Micro-organisms in the food industry & Food Safety hazards

  • Know the purpose of monitoring quality

  • Conduct Quality control tests

  • Interpret the test results

  • Differentiate between Quality Assurance and Quality Control 

  • Apply Non-conformances & take corrective action

  • Know the difference between GMP vs. HACCP

        
SPA 3 – WASHING & BASIC MACHINE OPERATIONS

  • Identify the purpose of washing equipment; washing raw materials and principles of washing

  • Apply Washing operations

  • Know and apply WCM principles and practices

SPA 4 – LABELING & PROBLEM SOLVING

  • Know the purpose of Labeling containers & Labeling principles

  • We all know that RPL (Recognition of Prior Learning) is intended to redress past injustices. However, since the inception of the term as an NQF principle, it has been largely uncharted territory particularly within the SETA landscape. CPC in conjunction with FoodBev successfully piloted a fresh approach to RPL based on the QCTO Policy and Procedure rather than the cumbersome procedures implemented by SETA in the past.

OVERVIEW

  • The ultimate attraction of this qualification is the adaptability to a wide variety of industries, positions, careers and business imperatives. 

  • The qualification provides learners with the range of learning and skills required to be able to perform a series of activities that are vital to the management and leadership processes.

  • This qualification contributes to the management and leadership function and related fields which will allow learners who achieve the qualification to contribute and function in areas such as leadership, motivation, delegation, problem solving, performance management, planning organising leading and controlling, and a range of other disciplines.

General Management

Learners who will typically embark on this qualification are individuals who have an interest in a career in management, and although the qualification is aimed at first-line and junior to middle managers, it is just as suitable for sharpening the skills of senior management.

MODULES

Module 1 – Management Communication
This module covers the business communication skills required by managers and includes reading, comprehension and presentation skills.

Module 2 – Management Calculations
This module covers the business calculation skills required by managers and includes calculation profits, margins and various forms of interest .

Module 3 - Basic Management
This module covers the leadership and management responsibilities. This module can be offered as a skills programme.

Module 4 - Financial Budgeting
This module covers managing the finances through a budget, identify income and expenses, applying various budgeting functions.

Module 5- Conduct Meetings
This covers how to conduct meetings of any kind in the organization and covers planning, conducting and recording meetings.


Module 6 - Deal with Customers
This module covers dealing with customers and visitors to the organisation either in person, over the telephone or via electronic media. 

 

Module 7 - Performance Evaluations
This module addresses the skills required for setting performance goals and assigning tasks, communicating the objectives, and getting buy-in and evaluating the performance of the team you deal with every day.


Module 8 - Manage Stock
This module covers the necessary skills to manage the ordering, receiving and counting of stock under your control. You will also be able to oversee the merchandising and promotion activities in your department. This course will also equip with knowledge of how the profitability in your department can be controlled and feed into the overall profitability of the store.
